Hot Malayalee Fried prawns

Ingredients:

1) Prawns 40 large

2) Dry red chillies 30

3) Peppercorns 1 tsp

4) Mustard seeds 1 tsp

5) Fenugreek seeds 1 1/2 tsp

6) Coriander 2 dessertspoons

7) Turmeric 1 inch piece

8) Cloves of garlic 14

9) Green chilies 10

10) Small onions 13

11) Ginger 1 piece

12) 1 sprig curry leaves

13) Tamarind (1 dessertspoon soaked in a little hot water)

14) Oil

15) Salt to taste

Method:
1. Fry and grind the pepper, mustard, fenugreek, coriander and turmeric and set aside.
2. Grind the red chilies to a paste.
3. Heat enough oil in a pan and fry a few curry leaves and tamarind, add finely chopped onions, crushed garlic and ginger, the red chili paste and the green chilies cut into small pieces.
4. Place the prawns in this, then add the ground spices and salt to taste, and enough water to cover the prawns.
5. Cook until water is absorbed and the prawns are tender
