Chicken (boneless thin steak style or boneless boti style ) – 1 kilo
Green Coriander (finely chopped) – 2 to 3 cups
Mint leaves (finely chopped) – 1 cup
Green Chili (finely chopped) – 10 in quantity
Ginger (fiinely chopped ) – 1 Table spoon
Garlic (finely chopped) -1 teaspoon
Youghurt -1/2 cup
Garam Masala – 1 tea spoon
Lemon Juice – 1/4 cup
Salt – 1 to 3/4 teaspoon / as per taste
Shashlik sticks
Cooking oil / Butter – 1/4 cup

1- Put the yoghurt in a big bowl.
2- Add salt, lemon juice, garam masala, chopped garlic, chopped ginger, chopped green chili, chopped mint leaves and chopped coriander.
3- Mix the marination well.
4- Now put defrosted chicken fillets in the marination.
5- Leave the chicken to marinate for at least 4 hours. But like they say the more the merrier and tastier.
6- Now put the chicken on the Shashlik sticks. This will make the tikka easier to handle at time of cooking.
7- Heat the pan and brush the chicken with oil/butter. Butter is a better option but if you prefer cooking oil that is ok too.
8- Cook the chicken on low heat, turning from time to time.
9- This is the tricky part. You have to make sure that the chicken is cooked well, so, don’t turn too much. Let one side cook and then turn.
10- While cooking keep adding little oil (1/2 teaspoon) to ensure the chicken stays moist and doesn’t dry out, but not too much to make the chicken oily. An easy way to get this step right is to make sure you always hear the sizzling sound.
11- Serve with salad, french fries and a delicious chutni to enjoy Hara Masala Butter Tikka.
